At work we have a bunch of wonderful cooks and I work in a office. We are always sharing recipes. Mike was talking about how he made Reuben Pizza a couple of weeks ago and I knew my family would love it. This weekend I decided to make it.
1 pre-made pizza crust
1/2 lb of corned beef
1/2 lb of Swiss cheese
thousand island dressing
We also used coleslaw
First take your pizza crust and lightly cover with olive oil on both sides.
Place in pre-heated oven at 350 just for a couple of minutes. You just want to warm it up. Remove from oven but leave the oven on. We are not done cooking yet.
Cover the top of the crust with thousand island dressing. I didn't have a measurement for the thousand island but I think we used about 3/4 to a cup.
Next place the corned beef on top of the dressing.
Then on top of the corned beef place the Swiss cheese.
Now place back into the oven for only about 7 minutes. You just want to heat it up and melt the cheese a little bit. Take it out again and still leave the oven on we still are not done with cooking our pizza.
Place the sauerkraut onto the lightly melted Swiss cheese. I think we put on about 3/4 of a cup.
Then add more Swiss cheese on top of the sauerkraut. Sprinkle caraway seeds on top of the Swiss cheese.
Time for the oven one last time. Cook at 350 for 7 minutes then boil till the cheese is bubbling and the crust is turning brown.
Time to cut and eat. Very very yummy.
I wanted to also try this with coleslaw and our son Bryan didn't want sauerkraut or coleslaw on his. I made a second pizza with this one I put the thousand island dressing, corned beef, Swiss cheese and caraway seeds on it. Then placed it in the over for 11 minutes at 350 and boiled it till the cheese and crust was browning. On have of this pizza I then placed cold coleshaw on it. Bryan ate the other half. I did have a piece of each to just give them a try and love them all.
