I wanted to make something for my family for Valentines day. A friend was talking about red velvet cupcakes that she loves (from Krogers) and I thought I'd give them a try. I turned the Google to find me a recipe. This is what I ended up with from food.com
Ingredients:
2 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup unsalted butter, softened
1 1/2 cups sugar
2 eggs
2 tablespoons cocoa powder
2 ounces water
2 ounces red food coloring
1 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon white vinegar
1 teaspoon baking soda
Cream Cheese Frosting
Ingredients:
1 (8 ounce) package cream cheese, softened
1/2 cup unsalted butter, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat the oven to 350 degrees.
Cream butter and sugar until fluffy.
Add eggs and blend well.
In a small bowl combine the vinegar and the baking soda.
Fold it into the cake batter. Make sure it's incorporated but don't beat it.
Pour the batter into cupcakes.
Bake for 15 to 20 minutes.
Until the cake springs back when touched. Sorry I forgot to take pictures of me making the frosting but it was very easy.
Cream Cheese Frosting:
Blend together the following:
1 8 oz package of cream cheese softened
1/2 cup unsalted butter softened
1 1/2 cups powder sugar
1 teaspoon vanilla extract
Blend until smooth and frost cupcakes once the cupcakes are cooled.

I always use a boxed mix to make cakes and cupcakes, but it doesn't sound too difficult to make them from scratch. Your cupcakes came out awesome!
I have to tell you the boys didn't really like these as they called them fancy cupcakes. They told me they just want chocolate not red ones. Boys what can I do?
Red velvet cupcakes....yum....now I want to go to the store to buy some...:)
